Sweet Potato & Carrot Hash
1 large diced sweet potato
5 medium carrots
1 sliced onion
1 garlic (fresh or powder)
1 teaspoon paprika
1 teaspoon ground salt
2 tablespoons olive or coconut oil
Dice peeled sweet potato, onion and carrots (no need to peel) and place onto a greased baking dish.
Sprinkle over the garlic powder, paprika and salt
Drizzle over the olive oil
Mix so that everything is evenly coated
Bake in the oven at 350'F for 45 minutes or until everything is cooked through and crispy. You can also make this on your stove top in a skillet.
Serve with poached or fried egg, fresh avocado or other greens
