Curried Potato Salad
Preparation time: 25 Minutes Cooking time: 30 Minutes Serves: 4 to 6
Ingredients 8 medium potatoes, peeled and cubed 1 Tbsp cooking oil 2 onions, diced 1 Tbsp Rajah Mild & Spicy Curry Powder 1 cup mayonnaise 1 Tbsp Garlic (optional) 1 Tbsp Parsley 3 eggs, boiled, peeled and sliced
Boil potatoes in salted water until just soft then drain and allow to cool.
Fry onion in oil until soft, add the Rajah Mild & Spicy Curry Powder and fry for 1 minute to release the aroma and flavor.
Allow the onions to cool then mix together with the mayonnaise, Garlic, Parsley and eggs.
