Spinach and Potato Curry

2 tablespoons oil 1 onion, sliced 1 tablespoon Rajah All-in-One Curry Powder 4 potatoes, cut into chunks 1 teaspoon Coriander 1 teaspoon Chili flakes or your favorite chili sauce 1 teaspoon Ginger 2 tomatoes, chopped 3 cups Vegetable Stock 3 cups of spinach, roughly chopped
Fry onion in oil until soft. Add Rajah All-in-One Curry Powder and fry for a minute to release flavor.
Add potatoes, spices, tomatoes, and vegetable stock. Cook and bring to the boil, simmer for 10 minutes. Add spinach and simmer over low heat for a further 15 minutes or until potatoes are cooked through.
Serve with roti, tortillas or favorite bread.
Add 3 more cups of Vegetable Stock and turn this into a yummy winter soup.
