Holiday Comfort Foods

We all look forward to the holidays because it gives us license to indulge in some of our all-time favorite comfort foods. At the same time, we know you want to be health-conscious where you can, too, and oftentimes the tricky part is nailing a healthy recipe that actually hits the spot. Here are all your holiday favorites made with simple fresh ingredients and they are all easy to cook! Don't forget the leftovers... stay tuned for some unique recipe ideas for the day after!


Prep time: 10 mins Cook time: 35 mins Servings 8-10

  • 3lbs sweet potatoes, peeled and cut into small cubes

  • 1 teaspoons salt

  • 1 teaspoon rosemary leaves

  • 1 teaspoon parsley

  • ¼ teaspoon black pepper

  • 2 tablespoons butter or Olive Oil


  1. Heat oven to 400.

  2. Combine all ingredients in a bowl. Toss to coat everything evenly. Spread in a single layer on prepared baking dish or cookie sheet. Place in oven.

  3. Bake at 400 for 35 minutes, turning every 10 minutes.


Prep time: 10 mins Cook time: 35 mins Servings 8-10

  • 3lbs sweet potatoes, peeled and cut into small cubes

  • 1 teaspoons salt

  • ¼ teaspoon black pepper

  • 1 cinnamon stick

  • 4 tablespoons sugar

  • 4 tablespoons butter


  1. Combine all ingredients in a medium sized pot and place on medium heat for 30-35 min. Cover with a lid.

  2. Stir every 10 minutes till the sweet potato is cooked through and serve.

  3. From here you can mash the sweet potatoes if you want.


Prep time: Cook time: 30 min Servings: 8-10


  • 2 pounds carrots, peeled, and cut into discs.

  • 3 tablespoons olive oil or melted butter

  • ½ teaspoon salt

  • ½ teaspoon pepper

  • 2 tablespoons chopped fresh rosemary


  1. Preheat oven to 400°F.

  2. If your carrots are not all the same size, cut up the larger ones so that all pieces have a uniform thickness. Add carrots to a baking dish.

  3. Drizzle olive oil or butter over carrots and toss till thoroughly coated. Spread carrots out in the dish and sprinkle with salt, pepper and rosemary.

  4. Bake in preheated oven for 30 minutes (depending on size of carrots), or until carrots are browned and easily pierced with a fork.


Prep: 20 min Cook time: 1 hr 15 min Servings: 8

2lb potatoes, peeled and cut into 1-inch pieces

1lb sweet potatoes, peeled and cut into 1-inch pieces

1 large carrots, peeled, halved lengthwise, and cut into 1/2-inch thick slices

½ onion, peeled and sliced.

1/4 cup olive oil

Salt and ground black pepper to taste.

Rosemary or Sage

Sqeeze of Lemon juice


  1. Pre-heat the oven to 375. In a large bowl, combine all the ingredients and toss to mix well.

  2. Transfer to baking dish and bake, covered with foil, for 30 minutes.

  3. Uncover, stir, and bake for an additional 30 to 45 minutes, or until tender.

  4. Place under broiler for about 3-4 minutes.


Prep time: 15 mins Cook time: 35 mins Servings 8-10

These mashed potatoes truly are perfect. They are light and fluffy and buttery, and the perfect side dish for turkey and gravy or roasted beef or pork. Don’t be shy with the butter for this one.

  • 5 lbs Russet potatoes, peeled and quartered. (You want the potatoes uniform in size)

  • 1 cup milk (cream or half and half )

  • 1/2 cup butter

  • salt and pepper to taste


  1. Place potatoes in a large stockpot and cover with water, add salt (about 2tsp.) and bring to a boil. Allow to boil for about 20-35 minutes, depending on the size of your potatoes, or until the potatoes are soft when poked with a fork. Do not cook them till they fall apart.

  2. Drain potatoes and mix with a hand mixer on LOW speed, or mash with a potato masher.

  3. Slowly add milk/butter mixture until you reach your desired consistency.

  4. Add salt & pepper.

Alternate: Cook potatoes until cooked but still firm, drain water and add only butter, salt pepper for soft sauteed potatoes.


Prep time: 10 min Cook time: 1 hour

Golden on the outside, tender on the inside.


  • Potatoes, peeled and cut in 4 wedges.

  • 2 tablespoons olive oil

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • 2 teaspoons lemon juice

  • Rosemary


  1. Preheat oven to 400 degrees F

  2. Toss potatoes in olive oil, salt, black pepper and lemon juice.

  3. Spread potatoes on a baking sheet. Bake in preheated oven for 30 minutes, turning potatoes halfway through. Continue baking until potatoes are tender and golden brown, about 30 minutes more.


Prep time: 5 min Cook time: 10 min (Perfect to the night before)

The tart flavor of cranberries makes a nice complement to any Holiday feast. This is a classic!


  • 1 pint of cranberries

  • 3/4 cup sugar

  • 1 cup orange juice (any citrus juice is okay)

  • 1 teaspoon of ginger (fresh or ground)


  1. In a medium saucepan over medium heat, dissolve the sugar in the citrus juice.

  2. Add ginger.

  3. Stir in the cranberries, and cook about 15 minutes.

  4. Remove from heat, and transfer to a bowl. Cranberry sauce will thicken as it cools.


These Butter and Garlic Green Beans are perfectly cooked and tossed with butter and toasted garlic. They're a quick, easy, and delicious vegetable side dish.

Prep time: 5 minutesCook time: 15 minutesServings 8

  • 1 pound green beans trimmed and washed. Cut into 1 inch pieces.

  • ½ onion, sliced.

  • 1 clove garlic, crushed or minced

  • 1 tablespoon butter

  • Salt and pepper to taste

  1. Melt butter over medium heat in a large skillet. Add the garlic and onion and sauté for 3 minutes. Low and slow will keep your garlic from burning.

  2. Add the green beans to the pan, sprinkle with salt and pepper, and toss for 12 minutes or until slightly tender. Serve and enjoy!

Make-ahead Instructions: Trimmed green beans and minced garlic can be stored in air-tight containers for up to 2 days before cooking.
