Greek Onion Pancakes (Kremidotiganites)
These onion pancakes are a staple in Greece. The ingredients are so easy to find you probably already have it all in your kitchen. Many variations exist depending on the region but the basic idea is that onions are mixed with herbs, flour, and other ingredients to make a savory pancake that is perfect with any meal! Use it as a base, side, breakfast, dinner or change up the flavors by changing the herbs or even adding fruit.
3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 3/4 cup water
3 medium onions, chopped fine
1/2 cup chopped herbs. (Try dill, parsley, and mint or use your favorite herbs)
Olive oil, for frying
Add the all-purpose flour, baking powder, salt, and pepper to a large bowl and whisk together. Stir in the water using a wooden spoon. Only stir until the batter is wet and well-mixed. Don’t stir too much or else the batter will get tough. Stir in the onions and herbs and set aside.
Add about 1 tablespoon of olive to a large nonstick skillet. Heat for a few minutes over medium and swirl the oil so that the bottom of the pan is coated. Add batter in tablespoon amounts so that you make small pancakes, the pancakes shouldn’t touch. Cook on one side for a few minutes, or until that side is golden brown. Flip and cook for a few more minutes. Repeat until all the batter is gone.
Enjoy with any meal or on it's own with a tasty Tzatziki sauce (yogurt cucumber dip)
TIP: Try other variations by changing the herbs or even adding fruit, your possibilities are endless. We suggest these:
