Pad Thai (Meal Box #5 & 16)

this was such a popular meal box that we did it twice! Inspired by the pad thai at Thai Tom, this recipe features a tamarind paste, vinegar, sugar, and fish sauce mixture over stir-fried eggs, chicken, and rice noodles, garnished with peanuts, chives, and fresh bean sprouts.

You’ll get tips for preparing rice noodles correctly and get the recipe for tamarind sauce, the sauce that makes authentic Pad Thai so delicious. Then you’ll see how to put everything together to create an amazing sweet and savory noodle dish. Garnish your Pad Thai with chopped chives, a sprinkle of paprika, lemon wedges, and fresh bean sprouts.

Main Ingredients

12 ounces dried rice noodles

2 tablespoons vegetable oil

2 boneless, skinless chicken pieces, slice into thin strips

1 clove of garlic, minced

4 eggs, beaten

1 teaspoons salt

Ingredients Sauce

½ cup +1 ½ tbsp sugar

½ cup vinegar

¼ cup fish sauce

2 tablespoons tamarind paste


1 cup coarsely ground peanuts

1 cups bean sprouts

¼ cup chopped fresh chives

1 tablespoon paprika

1 lime, cut into wedges


  1. Place rice noodles in a large bowl and cover with several inches of luke warm water; let soak for 35 to 45 minutes. Drain. While your noodles soak you can make the sauce.

  2. Whisk sugar, vinegar, fish sauce*, and tamarind paste in a saucepan over medium heat. Bring to a simmer. Cook for 3-4 minutes while stirring your sauce. Remove from heat and set aside. *(substitute soy sauce if you have allergies)

  3. Heat 1 tablespoon vegetable oil in a skillet or wok over medium-high heat (hot but not scorching). Add chicken, stir until chicken is cooked through, 5 to 7 minutes. Remove from pan and set aside. Do not overcook the chicken, no one likes rubber. Remove it from the heat.

  4. This step is quick! In the same skillet, heat 1 tablespoon oil and minced garlic over medium-high heat. Stir in eggs; scramble until eggs are nearly cooked through, about 2 minutes. Add cooked chicken rice noodles; stir to combine.

  5. Stir in sauce and salt. Cook until noodles are tender, 3 to 5 minutes. Stir in peanuts; cook until heated through, 1 to 2 minutes.

  6. Serve in a bowl and garnish with bean sprouts, chives, paprika, and lime wedges.
