Easy Shepherd’s Pie Recipe


This is a dish I grew up on and loved it every time my mom made it. It’s a British classic and all it is, is a ground meat and vegetable mix in a herb seasoned tomato based sauce and topped with creamy mashed potatoes. The best part of the dish is that it’s then baked till the mashed potatoes form a golden crust. Dig into that and you reach the creamy mash followed by the moist meat and veggies. It’s delicious!


INGREDIENTS

2lbs potatoes peeled and quartered

8 tablespoons butter

1 onion, chopped (about 1 cup)

1 cup carrots

1 cup peas

1 lb ground round beef

1 tbsp Worcestershire sauce

Salt, pepper to taste

1 clove of garlic

1tsp Rosemary

1tsp Oregano

1tbs tomato paste

1tbs cornstarch (binder)

METHOD

1 Boil the potatoes for mash: Place the peeled and quartered potatoes in a pot. Cover with at least an inch of cold water. Add a teaspoon of salt. Bring to a boil, reduce to a simmer, and cook until tender (about 20 minutes).

2 Sauté vegetables: While the potatoes are cooking, melt 1tbsp of the butter in a large saute pan on medium heat. Add the chopped onions and cook until translucent, about 5 minutes. Add garlic and carrots to the onions and cook for 4 minutes.


Preheat oven to 400°F.

3 Add the ground beef and seasoning: Add ground beef to the pan with the onions and vegetables and cook for about 5 minutes. Add the salt, pepper, herbs, tomato paste and Worcestershire sauce. Cook uncovered for 7 minutes. Add peas after the meat starts to cook, as they take very little cooking time.

Mix the cornstarch with about 2 tbsp of water and drizzle it over the veggies and meat while stirring. This is a thickener and helps bind any liquid in the pan.


4 Mash the cooked potatoes: When the potatoes are done cooking (a fork can easily pierce), drain the water from the potatoes and place them in a bowl with the remaining 7 tbsp of butter. Mash with a fork or potato masher, and season with salt and pepper to taste. If your potatoes are too dry add a little milk. You don’t want your mash too soft or dry.


5 Assembly: Layer the meat mixture evenly in a casserole dish (or individual ramekins) and spoon the mashed potatoes on top. Use a fork to make creative designs in the mashed potatoes so there are peaks that will get well browned.

6 Bake in oven: Place in the pre-heated oven and cook until browned and bubbling, about 30 minutes. If necessary, broil for the last few minutes to help the surface of the mashed potatoes brown.


Suggested variations:

Put a layer of creamed corn between the ground beef and the mashed potatoes.

Sprinkle grated cheddar cheese over the top of the mashed potatoes before baking.

Add your favorite curry spices to the meat for a Cape Malay Shepherd's Pie.
