Korean Lettuce Wraps with Kimchi

The pork is so tender and the fresh Kimchi tastes so good with it! Served in lettuce wraps with butter lettuce, steamed rice, and kimchi on the side. To achieve thin, crispy fast cooking pieces of meat slice while semi-frozen. This gives the meat more resistance when cutting.

1 Pork tenderloin, sliced thin

1-2 T cooking oil, as needed

2 c cooked rice, cooled

Bulgogi Marinade

4-6 cloves garlic, peeled and crushed

2 T fresh ginger, peeled

1 small pear, peeled & diced

1/3 c soy sauce

1 ½ T sugar

2-4 T sesame oil, 1t reserved

4 green onions, chopped, white/green separated (reserve green)

Marinate the pork:

Slice the pork into thin slices.Place the pear, white of green onion, garlic, ginger, soy, and sugar into a food processor or in a blender and purée until it has the consistency of applesauce. . Put the pork slices with the marinade into a large ziploc bag or covered container. Add a pinch of the green onions, stir to combine. Mix the pork and marinade together until evenly distributed. Refrigerate for at least 30 minutes or up to 24 hours.Heat oil in a skillet over medium high heat). Working in small batches cook the meat until cooked, 5-6 minutes. Top with 1t reserved sesame oil and green onions when cooked.
