Hawaiian Fried Rice
Better than takeout! The recipe is quite simple, quick and tasty. Serves 4-6 people or a split the recipe for smaller meals during the week. I love how the pineapple adds a sweet taste with every bite. It balances out all the flavors.

3 cups rice
1lb Fantasma’s Finest bacon pieces
2 tbsp soy sauce
Green onion, diced
6 farm fresh eggs
½ cup pineapple pieces
Prepare Rice: Prepare 3 cups of uncooked rice as you normally would in your rice cooker or stove top. One extra step here is to give the rice a good rinse first. Then add a cup of water for each cup of rice, add 1/2 tsp salt and cook on medium heat for 15-20 min.
Beat 6 eggs together and set aside. Heat a large skillet or wok over medium heat.
Add the bacon pieces and sauté for 5-8 min until bacon is cooked through and begins to brown. Take care not to overcook the bacon.
Add half the diced green onion and cook for 1 min.
SLIDE bacon and onion to the side of the pan, and pour the beaten eggs onto the other side. Using a spatula, scramble the eggs. Once cooked, mix the eggs with the bacon.
Add the rice and pineapple to bacon and egg mixture. Turn off the heat.
Pour the soy sauce on top. Stir and fry the rice until heated through and combined. Add remaining green onions.
