Greek Salad Tacos with Cucumber Dill
Now that it is spring these easy Greek salad tacos are really delicious and different. A nice alternative to a salad or a lighter dinner and is great for diabetics who need to watch carb and sugar intake. You can either grill chicken and slice it, or use left over rotisserie chicken. Don't feel like you need to stick with chicken either. Try this recipe with some fish, lamb or thinly sliced steak. Recipe Serves 4 (8 tacos)
2 c Grilled Chicken 4 c Cut/shredded Hydroponic Lettuce 1 c Diced Tomatoes 3/4th c Diced Cucumbers, slice remaining cucumber. 1/4th c Diced Cilantro
1 lemon 1/2 cup Feta Cheese Crumbled 1/4 cup Sliced Black Olives 1tbsp Olive oil for dressing 1 c Greek Yogurt
1/4 c chopped fresh dill 8 Flour Tortilla’s
Toss together chicken, tomatoes, cucumber, cilantro, lettuce, olives and 1tbsp olive oil for the salad and squeeze about 1tbsp lemon juice over the salad.
The dill dip is made by mixing the dill with the greek yogurt and smidge of salt
Fill your tortillas with the salad to make each taco and top with the feta and drizzle of the dip and you are good to go.
Serve with the remainder of sliced cucumber.
