Breakfast Salad with Goat cheese & Honey, Mustard Dressing
Who says salad is just for lunch, dinner or hot summer days? I love this Goat cheese salad with honey, mustard and pistachio dressing because the ingredients are so simple and it is very easy to prepare. Good food starts with quality ingredients and usually include a combination of flavors and textures.
Place your favorite salad leaves into a bowl, then add the sweet corn and the pine nuts. Next add the tomatoes and the slices goat cheese into the bowl. Depending on the cheese you choose, you could pan-fry the slices of cheese for a just a minute or so.
1 head of your favorite lettuce
6 cherry tomatoes
A smidge of orégano
6 slices of goat cheese
1 fresh peach (sliced)
Some pine nuts (lightly roasted)
2 tablespoons of sweet corn kernels
1 onion (chopped and fried)
A spoonful of mustard Dijon
A spoonful of honey
Extra virgin olive oil
A spoonful apple cider or sherry vinegar
Handful of pistachios (lightly roasted & crushed)
Prepare the dressing: In a bowl, put the mustard, honey, pistachios. Then add oil and vinegar. Drizzle over the salad just before serving.
Now you are ready for the day!
