Mediterranean Lemon Chicken Kebabs with Feta, Strawberry & Almond Salad
Fire up the grill, summer is here!! That means food on a stick is the in thing. The possibilities are endless. Weekend Meal Box #22 Time: 35 Minutes Serves: 4 Or More
Chicken marinade Ingredients
¼ cup olive oil
¼ cup freshly squeeze lemon juice
1 ½ tsp salt
1 ½ tsp dried oregano
½ tsp dried rosemary
½ tsp ground black pepper
pinch of cayenne pepper
1 pound boneless skinless chicken cut into bite sized pieces
1 large bell peppers cut into small chunks
1 large onion cut into small chunks
1 zucchini, cut in ½ inch slices, then quartered
3 oz Olive Oil Herb Blend (Fresh rosemary, thyme, lemon, balsamic)
Soak the bamboo skewers in water for at least 10 minutes before assembly & grilling to prevent them from burning. Thread the chicken pieces, peppers, and onions onto the skewers alternating between the chicken and vegetables. Brush or drizzle the olive oil herb blend over the tops of the skewers.
Cook your kebabs on the grill, in the oven or in a hot pan.
Grill: Fire up the grill and cook for 12-15 minutes, turning the kebabs to cook all sides.
Oven: Place the basted skewers in the pre-heated 450 degree oven on the center rack. Bake for 8 minutes, turn over once. Bake for 7 minutes longer. Keep an eye on them.
Stove Top: A hot pan will sear the chicken to give a grill like finish to your meat on medium high. Add a little oil to the pan. Wet your fingers with a little bit of water and flick it onto the pan. When the oil sizzles after touching the water you know it’s warm enough. When the pans are hot, add the skewers to the heat. Cover and let cook for about 5-7 minutes before turning the skewers over. Cook on all sides until done. This should take 15 minutes tops.
When done remove the skewers from the heat, let rest for 5 minutes and serve with additional lemon slices if desired.
FETA, STRAWBERRY AND AMOND SALAD WITH POPPY SEED DRESSING.
Put the Salanova lettuce in a large bowl. Thinly slice and add strawberries, feta and almonds. Drizzle the dressing over the salad, toss well and serve with your kebabs. Enjoy!!
