Friedrich’s Ultimate Mac & Cheese

Leave the cardboard mac and cheese behind, it’s time to make your own! This mac and cheese recipe will be on my "if I could only eat one thing" list. Make it in any size casserole, though I prefer a large flat dish. And, if I want to kick it upstairs I use the best cheese I can afford and bake it in ramekins for individual servings. This is a spoonful of dreamy cheesy goodness and a quick dinner fix that both kids and adults will love!

1lb macaroni

1 pkg Homestead Creamery Aged Cheddar cheese (Local)

7oz four cheese blend - asiago, fontina, parmesan, provolone

3oz panko breadcrumbs

¼ tsp smoked paprika

Béchamel Sauce 2 tbsp butter 1 tbsp flour ¼ tsp mustard

¼ tsp black pepper

2 cups milk

salt to taste

Preheat oven to 350 degrees F.

In a large pot of boiling, salted water, cook the pasta to al dente or 10 minutes. TIP: We provided extra salt in your kit, save ¾ tsp for your sauce and use the rest to salt the water. Salt raises the boiling point of water. (Add as much as you care to.)

While the pasta is cooking, in a separate pot, melt the butter over medium heat. Whisk in the flour, pepper and mustard mix and keep it moving with a whisk for about 4-5 minutes. Make sure it stays smooth. Slowly stir in the. Add ¼ cup of pasta water. Simmer for 10 minutes then turn the heat down.

Grate and stir in 3/4 of the Homestead Cheddar Supreme cheese. Season with salt. Fold the macaroni into the mix and pour into a casserole dish. Top with remaining cheese and sprinkle the panko over the top of the cheese. Top the macaroni with the panko and sprinkle with smoked paprika. Bake for 15 minutes. Turn oven on broil and grill the cheese until it begins to turn golden brown, about 2-5 minutes. Do not take your eyes off of it. Remove from oven and rest for five minutes before serving.

BACON: If you are adding bacon bake it on a roasting pan for 20min in a 400F oven. Chop in smaller pieces and add to the sauce after adding the cheese.

TIP: Slice a tomato and layer it on the macaroni, salt and pepper, then top with cheese.

Remember to save leftovers for fried Macaroni and Cheese.
