Spinach & Beet Salad
Spinach is the ultimate super food. This leafy green is loaded with antioxidants, vitamin A, vitamin C and iron, needed for thyroid health. So you can't go wrong with this salad. It is so tasty you'll forget how good it is for you! As if it couldn't get any better, fridge to fork is less than 5 minutes. Be sure to take extra care when working with beets (canned or fresh) because of their tendency to stain anything from hands to clothing.

1/4 cup olive oil
3 tablespoons apple cider vinegar
1 tablespoon honey
a few slivers of chopped onion
pinch of pepper
10 oz fresh spinach
1/4 cup pickled or cooked beets
1/4 cup goat cheese
1/4 cup pecan pieces
What to Do:
Combine and mix together the oil, vinegar, honey, pinch of pepper to make a dressing.
In a large bowl, combine the spinach, beets, pecans and goat cheese. Pour the dressing over the spinach mixture. Toss to coat well. Serve and enjoy!
